I have a new favorite salad – power slaw! And I’ve been eating on repeat for lunch. It’s quick to make and healthy, too.
Inspired by a salad I had for brunch at Sedona Taphouse earlier this year, power slaw is my twist on their delicious salad called “Power.” It’s quickly becoming one of my favorites. And that’s saying a lot, considering I make the best kale salad you’ll ever eat.
The recipe below is for a single, lunch-sized serving. If you’re making it for a dinner party or barbecue, just increase the amounts.
Power Slaw
2-3 Tuscan kale leaves, chopped
1 cup rainbow slaw
2 tbsp dried cranberries
2 tbsp roasted sunflower seeds
2 tbsp feta
Coleslaw dressing to taste
- Toss together Tuscan kale, rainbow slaw, dried cranberries, and sunflower seeds
- Add dressing – as much or as a little as you like!
- Sprinkle with feta
So easy, right!?!
Now, a few notes about the ingredients.
- I love the taste of Tuscan kale in this recipe, but curly kale works just as well.
- Rainbow slaw is a mix of broccoli, cauliflower, red cabbage, and carrots that I find at Wegman’s. I like this one because I feel like it gives me a good variety of veggies. You can also use regular coleslaw mix, a mix of kale and cabbage, or broccoli slaw.
- If I have them on hand, I’ll also toss in a few shredded Brussels sprouts for a bit of extra power.
- I use the store-bought coleslaw dressing from Wegman’s below because it’s quick and easy, but if you prefer to make your own, any traditional coleslaw/poppyseed dressing would work well.

OMG I want to try this. Although I’m ashamed to admit I’m not sure what rainbow slaw is? I’m liking the cranberry and feta combo!
Rainbow slaw is delicious! It’s a mix of shredded cauliflower, broccoli, cabbage, and carrots. It’s in the bag salad section at Wegmans.
