We love the chorizo from our local farmer’s market. And during the warmer months, we grill sausages at least once or twice a month. When we do, I always make a double batch and use the leftovers for one of my daughter’s favorite lunches: sausage sizzle.
Sausage sizzle is super easy and perfect for kids who prefer a hot lunch in a thermos or as a quick and filling work-from-home lunch. Filled with protein and veggies, it’s also easy to modify based on the veggies you and your family like best. The recipe below is for a single, lunch-sized serving, but it’s easy to increase amounts based on your family size.
Sausage Sizzle
1 cooked sausage, sliced
½ cup roasted potatoes
3-5 Brussels sprouts, sliced (about ½ cup shredded)
Olive oil
Salt & pepper
Red chili flakes (optional)
- Warm a swirl of olive oil in a frying pan over medium heat
- Add the Brussels sprouts and cook until they begin to soften and brown, about 3-4 minutes
- Add the sausage and potatoes. Cover, and cook for 5 minutes.
- Remove the lid, allowing the condensation to deglaze the pan.
- Stir, and continue cooking 1-2 more minutes until the Brussels sprouts are carmelized and the sausage and potatoes are heated through.
- Season with salt and pepper. Sprinkle with red chili flakes if using.
Notes!
- This sizzle is a great way to eat more veggies. Many work in this sizzle, including roasted cauliflower, roasted sweet potatoes, roasted butternut squash, and roasted beets. Raw or cooked broccoli works well, too.
- Any sausage will work, so if you don’t like chorizo, just add your favorite. You can use leftover grilled chicken, too.
- If you want a little bit more substance, add a small scoop of rice or cauliflower rice.
- If you are sending this to school in a thermos, remember to add boiling water to your thermos while you cook the sizzle. Doing so helps to warm up the thermos before adding your sizzle and keeps the food warm longer.
