Grilled cheese and tomato soup is one of the ultimate comfort food combos. I make big batches of tomato soup in the summer when tomatoes are at their peak, and pull it out of the freezer all winter long. But soup on its own is often not enough. That’s where my elevated grilled cheese sandwich comes in.
Grilled cheese with apple, thyme, and honey elevates your favorite childhood classic. And the best part? It’s simple to pull together after a busy day.
Grilled Cheese with Apple, Thyme, and Honey
4 slices sourdough bread
6 slices cheddar cheese
1/2 medium apple, sliced
1-2 tsp fresh thyme leaves
drizzle of honey
Spreadable butter
Instructions:
- Preheat your pan or panini press
- Butter one side of each slice of bread
- Layer the ingredients in this order on the non-buttered side of the bread: cheese, apple, thyme, honey, more cheese
- Top with the second slice, butter side up
- Grill until golden and the cheese begins to melt.
Notes!
- Use your favorite type of apple. I prefer honey crisp or one of the extra crunchy, heirloom varieties from our local farmer’s market such as pixie crunch or crimson crisp.
- If you don’t like cheddar cheese, switch it up! Brie works great, and Swiss might work, too (I’m not a Swiss cheese fan)
- We like using sourdough bread as it has no added sugar, but whole wheat, multigrain, Ezekiel bread, or anything from your local bakery works just as well.
- To elevate this sandwich even more, add a slice or two of thinly-sliced proscuitto
Additional Grilled Cheese Varieties
While apple, thyme, and honey is my family’s favorite, you can switch up your grilled cheese to include other yummy combos. Here are a few ideas, but experiment with your own, too!
- Cheddar, Brussels Sprouts, and Prosciutto
- Brie, Asian Pear, Arugula, and Fig Jam
- Mozzarella, Tomato, and Basil
- Pepper Jack, Tomato, and Avocado Mash
- Cheddar, Apple, Ham, and Fig Jam
- Smoked Gouda, Prosciutto, and Apricot Jam
