It’s summer grill season and I couldn’t be happier about it. From burgers and chicken to sausages and veggies, I love it all.
Our family loves beef, so burgers make a regular appearance throughout the summer. This easy mixture is a healthy twist on the classic and will take your burgers to the next level. And, it adds a jolt of veggies to boot!
Beef & Beet Burgers
1 pound grass-fed ground beef
1 beet (red or golden), shredded
1 small shallot, shredded
1 tbsp steak seasoning (I use Rufus Teague’s, but any brand or homemade version will do)
Salt & pepper to taste
Pretzel rolls
Burger toppings: lettuce, tomato, pickles/pickle relish, etc.
Combine beef, shredded beet, steak seasoning, and salt & pepper together until just mixed. Form into 4-6 patties, depending on the size of your roll.
Set your grill to the “high” setting. Grill to desired temperature.

Grilling tip: my husband recommends cooking your burgers on grill mats to prevent them from sticking and getting stuck between the grates. Our exact ones are sold out but these are similar.
I like to serve these burgers on toasted pretzel rolls with lettuce, tomato, mayo, and dill pickle relish. But use whatever rolls and toppings you prefer. Add a side of homemade fries or corn-on-the-cob and dinner is served!
Why add beets to your burger?
Beets are a gem of a veggie. And not just because of their rich color. These yummy little earthy bulbs are a good source of the chemical betaine anhydrous and the amino acid tryptophan, both of which boost your mood!
They’re also loaded with vitamins and minerals and other nutrients including folate, manganese, and copper. They have fiber, too, which is an essential part of a healthy diet. But did you know that most of us don’t get enough fiber in our diet? In fact, only 5% of people in the US hit the daily recommended target.
Beyond these amazing health benefits, adding beets keeps your burger nice and juicy, even for those of you whose preferred preparation is “charred.” And if your kids are opposed to veggies, don’t worry, these are kid approved!
Do I need to use grass-fed beef?
You don’t, but I strongly suggest that you do. Grass-fed cattle enjoy a cleaner, more natural nutrient-rich diet than their grain-fed counterparts. And because their diet is richer in nutrients, you reap the benefits.
We purchase much of our beef at our local farmer’s market. Shopping at your local farmer’s market not only supports the local community, but it also means you can get to know the farmer and the practices used on their farm.
