I love smoothies, especially in the summer. And I also love sneaking veggies in unexpectedly. That’s exactly what this smoothie does. It’s a sweet, creamy treat that has an added boost of vitamins and fiber from the beets. Not to mention a good mood boost, too! Here’s what you need.

Cherry Berry Beet Smoothie
1c. frozen cherries
1c. frozen strawberries
3-4 slices frozen beets
2c. almond or coconut milk
1 scoop collagen powder
Add the milk to your blender, followed by the collagen powder and then the frozen veggies. Mix until smooth. If your smoothie is too thick, add a more milk, a little bit at a time.

You can also add 1/2c. frozen avocado and/or one half of a fresh or frozen banana for extra creaminess.
This smoothie also works with fresh fruit. There are a few places near us where you can pick fresh sweet cherries and strawberries. And if you’re like me, you often pick waaaay too much. Smoothies are a great way to use up the extra fruit. If your fruit is fresh, just add a cup or two of ice to keep your smoothie frosty.
We enjoy smoothies for breakfast and for snacks. But we also use make them for dessert at night if we’re craving something cold and sweet but are trying to avoid ice cream.
