Summer is almost here! And with Memorial Day coming up this weekend, I thought it would be fun to share this refreshing watermelon smoothie recipe with you.
I love watermelon. And to me, it screams summer. I picked up our first watermelon of the season at the store this week and decided to see how it would work in a smoothie. Spoiler alert: it’s delicious. I’ve already made this twice, and everyone in my family likes it.
Friends, this smoothie tastes like summer in a glass. Filled with juicy watermelon, frozen cherries and berries, and fresh mint, it’s a summery twist on my cherry berry beet smoothie. Here’s the recipe.

Watermelon Cherry Berry Smoothie
4 cups diced watermelon
1 heaping cup frozen cherries
1 heaping cup frozen strawberries
3-4 slices frozen beets
1 tsp chia seeds
8-10 mint leaves
Add all ingredients to a high-speed blender and blend until smooth and frosty. If the smoothie is too thick, add up to 1/2 cup water while blending.
This recipe makes about three servings. If you have leftovers, simply store them in a jar in the fridge. The next day, shake them up and enjoy again!
